WTS M. Hinoura 170 KU Santoku

Up for sale is a santoku by M. Hinoura. Core steel is white #1 with hammered KU stainless cladding. I bought it to both try the maker, and the steel. Really nice distal taper so it feels sturdy on the board. It is a great cutter, thin behind the edge, and the steel takes a nice edge, though I only sharpened it once, and used it pretty sparingly. Santoku is not my preferred shape (gyuto guy here) and I definitely gravitate towards longer knives. It is way too nice a knife to be sitting unused on my rack. Dimensions are:

Length: 173mm
Height: 50mm
Thickness at handle: 5mm
Weight: 187 g

I outfitted this with a stabilized maple burl handle, with brass and g10 spacers and ferrule from dyed curly maple. The saya is also maple burl, with a brass pin.

Asking for $200 which includes PP and Shipping in Conus. Would also consider trades, though generally I am looking to trade up and would be willing to add some cash.

Thanks Jedy! This is one of my favorite octo handles. Both the handle and ferrule woods are really attractively figured and the spacer adds just the right amount of bling. IMHO

Thanks Homechef! Thanks McMan! I am a big fan of that maple lace burl, really incredible grain figuring and eyes. It isnt the easiest stuff to work with, as there are often checks and inclusions that need to be filled, but it is beautiful when it is finished.

Hah....no, not famous by any stretch Ibrobert, but I do enjoy doing handle and saya work. A well crafted knife should look as good as it cuts. IMHO
