Up for sale is a santoku by M. Hinoura. Core steel is white #1 with hammered KU stainless cladding. I bought it to both try the maker, and the steel. Really nice distal taper so it feels sturdy on the board. It is a great cutter, thin behind the edge, and the steel takes a nice edge, though I only sharpened it once, and used it pretty sparingly. Santoku is not my preferred shape (gyuto guy here) and I definitely gravitate towards longer knives. It is way too nice a knife to be sitting unused on my rack. Dimensions are:
