Didn’t think I’d ever sell this one, my first Western made gyuto. Dave’s stainless is an incredible steel, strops back to a stable razor edge like literally no other. The cutting performance of this knife was the closest to the Kato out of all my knives when I had the pass around and compared side by side. But I haven’t been using it; I think I have so many that I’m ignoring the best all arounders. It does have some scratches on the face probably from gritty stuff getting into a sleeve; I haven’t polished those out as I’d be liable to make it worse instead of better.

I have something very similar from Dave and I concur it’s a great low maintenance combination. The PM steel is fine grained stainless but long wearing, the acrylic handle is no drama on a wet board.
Big shout out to Dave’s profile, heel height and grind, it’s a very functional all rounder that will make someone very happy.
