MATSUBARA PETTY, 150mm, AOGAMI 2
$95. Patina is free. SOLD
Blue 2, stainless clad
Handle: stabilized dyed oak burl
Ferrule: stabilized bog oak
Blade, handle to tip: 165mm
Edge, heel to tip: 154mm
Blade height @ heel: 34mm
Spine thickness @ heel ≅ 3.1mm
Weight: 94g
Purchased June, 2023 from Sugi cutlery, it has a custom handle by @JoBone. I bought it to get my wife in the game; she eventually reverted to her unsharpen-able, over-steeled Dexter boning knife.
K. Tanaka’s B2 is nice to sharpen, with quite good edge retention. I sharpened it 3x (including just now for listing) with a 3K or BBW stone. With all my knives I generally sharpen lightly with high grit — what some would call touch-up. All use has been on end grain cherry boards.
Paypal, CONUS shipping, and insurance included.
Thanks for looking.
The brightness & red color are exaggerated in the following photo:
