SOLD Misono Swedish Carbon Hankotsu Boning Knife with Saya

Purchased from Korin with the saya for $150. Initial sharpening by Korin. I've used this on two rib roasts and three pork shoulders and haven't taken it to the stones. It's mostly just sat in its box in VCI paper. There's a light patina in places (and a couple small pits on the back of the blade near the spine) but it's in excellent "barely used" condition. If it was stainless, it would probably still look brand new.

I use mine all the time. I find it’s particularly useful in removing silver skin. Takes a great edge.
