Howdy Knife Knuts,

I did some searching but didn't really find anything on the pros and cons of this knife.

Anyone care to share their thoughts?

Thanks as always.

:)

@TokushuKnife it looks like you might be a fan of this knife. If so, any thoughts to share on what you like about it and general characteristics?
The Moritaka Hamono Aogami Super Steel Tall Bunka is one of my favorite knives! I have big hands and the 56mm Height is just right for me. I primarily push cut and chop vegetables, but enjoy the bunka tip for dicing onions. I rarely process or cook meat in my kitchen, so I prefer this to a gyuto. It is one of the better stock grinds on a Moritaka Knife. If you have heard Moritaka Knives need to be thinned, this know does not fall into that category, typically the longer ones 240mm + do. So basically, this tall out of the box beauty brings the best of Aogami Super Steel to an excellent shape. Now, Moritaka cladding is reactive, but the feel and crazy good edge retention keep it as my first pick.

No worries man, let me know if you have any other questions. I just wrote a blog about Moritaka- AI corrected my grammar....but they do have an interesting history. Moritaka Hamono Blog - If you don't have a Moritaka, it is worth getting one just to experience the heat treat. It feels like Itsuo Doi steel- they just feel like "magic" on the stones.
