Moritaka Hamono Aogami Super Steel Tall Bunka is one of my favorite knives! I have big hands and the 56mm Height is just right for me. I primarily push cut and chop vegetables, but enjoy the bunka tip for dicing onions. I rarely process or cook meat in my kitchen, so I prefer this to a gyuto. It is one of the better stock grinds on a Moritaka Knife. If you have heard Moritaka Knives need to be thinned, this know does not fall into that category, typically the longer ones 240mm + do. So basically, this tall out of the box beauty brings the best of Aogami Super Steel to an excellent shape. Now, Moritaka cladding is reactive, but the feel and crazy good edge retention keep it as my first pick.
