Thoughts?

Not asking for your thoughts about honesukis vs. other boning knives but specifically about this honesuki compared to others or just it's performance.

I love my Moritaka honesuki. That said, it’s the only one I’ve ever owned so I can’t compare to anything else. Very sturdy little knife. Mine is Blue 2 and takes a great edge. I ground it down to zero with a microbevel and it’s never chipped, having processed 100+ chickens in its life.

I like the shape of it, flat profile, very triangular. Tip is precise and heel is good for the Japanese technique of slicing the top of the breast with the heel.

10/10 recommend.
