  • Handle: 145mm long, 22mmx25mm tapering to 19mmx22mm, burned oak, oiled and waxed
  • POB: 54mm from the hande
  • Spine: 2.71mm at the neck, 2.67mm at 14.2cm, .57mm 1cm from the tip
  • Grind: flat to convex, right hand bias
  • Weight: 158g
  • Relieved choil and spine
  • Edge: .17mm@1mm, .31mm@2mm, .60mm@5mm, .98mm@10mm Measured at the midpoint.

I have a SheffCut that’s broken down a good amount of pork loin and strip steak for me. Even a singular chicken breast, just cuz.
 
interested in a new suji :) Could you briefly describe your heat treat process for this 52100 knife?
 
Sure thing. First the was a normalization cycle, followed by a DET anneal, then austenitization, the quench and finally tempering.
