I had my eye on one in a shop in JP, and just when I was going to buy, the last one was sold. If someone knows of a retailer with stock, it would be much appreciated!

Well you could always get a chisel by him. Those are plentiful, and I only used the nakiri only to try the steel anyway, when I had mine. Truly a lived-up-to-hype steel. There's a lot of talk about iwasaki tamahagane, and it's deserved I guess having tried it, but Nagahiro was more impressive to me, finally, overwhelmingly, in sharpness and almost violent aggression.

Yes I have seen plenty of chisels and planes by him, but I think a chisel would make veg prep slow :)
I have heard the same about the knives, hence the search.

Unfortunately I don´t have the knife you´re looking for but let me know if you want to get rid of the J.B. someday. I have a Raquin gyuto 19cm that doesn´t grow on me..

Joel made it as a one off - some years ago when you could write to him and ask for a knife and he made it. I asked for a santuko style, he said the price, I said ok, he made it. 8 years ago maybe.. it’s a bummer because I should love it, but I don’t.
I will send some pics when I am back home, end of the week, also will ask him if he remembers what it is made of.
Some things just don’t fit, but you know that, I can hear.
