Not much of a long time lurker....actually just beginning my journey down the knife rabbit hole. I've been cooking a long time now, really mostly interested in just about any knife better than my current ones (Victorinox 8" chef and Wusthof santoku).

Well, just bought my first Japanese knife on this forum, another reason I made an account - Shibata Koutetsu R2 Migaki Gyuto 210mm
