Hey guys. I'm only a couple years into cooking knives. My first was the Misen 8" chef's knife. It's a really great knife for the price, but it seems they are going, or have gone, out of of business. My next purchase with a Chinese vegetable cleaver. It's not great. Today I got a Tojiro Nakiri DP. I have some questions about, so I thought I would ask the fine folks here.
