What knives do you have now?

Thank you! Yeah I’m seeing that! I wish I got on here sooner. It took me a little bit to figure that I had to post a hello before I could reply to others post and stuff like that lol.

Currently I have:
Jiro 210mm gyuto
Takeda 240mm gyuto
Oul (hado) 180mm Petty
Tetsujin 270mm Sujihiki
Kanehiro (Kato) 240mm gyuto
2 microtech ultratechs

I do sharpen and use a progression of choseras, I want to get a natural stone but they’re so pricy and I don’t know enough about them. I’ve been watching so of the JNS guys videos as well ask emailing him with questions.

That’s a wonderful collection also! How’s the TF? Im seeing they have quite the following.
 
Thanks! They are known for terrible fit and finish which is largely true. The steel is very nice though. Great heat treat and gets and holds a very nice edge. I really like them. I wouldn’t say they are as great as the hype, but very nice and I won’t be selling mine anytime soon.

Gotcha! I’m on the hunt for a new nakiri so was checking those out.

What’s your Kato, there’s a few makers under tha name lol

Morihei Hisamoto is made by TF but much cheaper. I’ve heard good things about that nakiri. The Watanabe pro gets a lot of nakiri love too, that’s on my radar for a nakiri.

My Kato is a Yoshimi Kato butcher in AS. It is very unique, but steel and fit and finish are excellent. I’d like to try other examples.

I don’t really have a favorite. I like certain knives for certain things. I reach for different ones depending on how I’m feeling etc. It’s like picking a favorite child 😅

Oh nice! That’s the same Kato as mine. I got it about 10 years ago and was my first Japanese knife. It’s the 240 as nashi gyuto. I love it.
