I've been into cooking for 30+ years, starting when I was a little kid. I've never cooked profesionally, but I do consider myself an above-average home cook.
For most of my life I've been using basic cheap stainless blade knives, and only discovered the joys of Japanese carbon steel blades over this past year. My collection is still small and humble, but it's growing at a rate that is a little bit alarming to my spouse lmao
Anyway, I'm looking forward to learning a lot here and probably buying and selling some knives!
