Hello everyone! I am Yiwei, a graduate student who loves cooking as a hobby. Recently I started to pay attention to my knife collections. I realize that I am still using a random $5 used department store santoku that I got in my sophomore year lol. I sharpens it so it is actually decently capable (better than my roommate's neglected global), but the retention is horrendous. My roommate has a global and it is generally very nice after I sharpen it, but the handle doesn't fit well and I also just want to get a nice knife of my own. So I am currently looking for a nice gyuto. Hope to get some suggestions!
