I've been cooking professionally for a little over 5 years now. I learned I like cool knives, then I learned how to sharpen. I'm hoping I can get rid of some of the ones I've picked up over the years and pick up some fresh ones. Favorite currently is my Kagekiyo B#1 230mm, hoping one day I can get a konosuke fujiyama FM.
