I don't consider myself a knife collector, although I seem to have wound up owning a number of knives. I do love to cook and appreciate having the tools to do it properly. I've owned a Henckels Professional set for about 25 years, supplemented it with a Henckel's Gyuoto and Santoku, then got a few inexpensive Aogami Supers (Shenko Seilan's).
