just a quick hello from a fellow food and knife enthusiast. I have always found that good tools make the work easier and more enjoyable. So after having replaced some of my knives I must admit that it was something I should have done a long time ago. So now i guess it’s down the rabbit hole to learn more about knifes and the best way to try something different. As of now I mostly work with Gyuto, usuba, and santoku. But I bet that will change soon.
