What I have here is a pristine brand new 210mm Yanick gyuto. Height is 51mm. It is ridiculously sharp! The choil and spine are beautifully polished. Fit and finish are as good as it gets.

From the few Yanicks I’ve tried, I always wished they had these dimensions. His work is great regardless but I feel like his blades at this size are absolute demons.

Totally agree. This is another Yanick that I own and use quite frequently. A CRAZY performer indeed! Extremely satisfying to use.

Not sure to be honest. I gotta buy a scale. Feels heavier than a 210 Fujiyama.
