Hello fellow Chicagoan. I noticed your survey tends to lean towards western profile knives. I would keep this in mind as you get your new knife. Some jknife profiles make for awkward rock chopping. Stainless is the way to go if you don't want to maintain yourself. I've put one cheaper jknife through to NWC for hand sharpening. I don't trust it. I watched a younger worker on the wet stone and didn't feel like there was any angle consistency. The knife came back badly scratched.
 
I have not used Gesshin Uraki myself, but have only heard good things about it. Do let us know how do you like it. And have fun! :)
 
Ordered the knife on Friday and received it on Tuesday, fast shipping. Played around with it last night. Definitely sharp - Jon sharpened before sending. It does feel a tad sticky but that could just be me getting used to it.
