I wanted to try out some new oyster knife. What oyster knives do you guys use? I live in Italy and I work mainly with european/french oysters.

i have one. and i have gotten fairly quick with it.

it is a Victorinox Brand. it's what they call a "new Haven" style. the tip is thinner and has the tiniest of bends. works for me. $15 in the USA.

I like the R Murphy New Haven (bent tip). Works well for thicker hinges and deep cups. For smaller/flatter/delicate oysters, I like a short flat blade. R Murphy and Dexter-Russell have a ton of different profiles and are cheap, so it won't break the bank to grab a few different patterns.
I think some guys here also like Toadfish. There are some made in France oysters knives that are nice too (flat, short pointy blade).
