partially removing bolsters on old dirty carbon?

As I now have a belt sander and will soon have a bench grinder I am thinking it is time to remove at least part of the bolster on the old dirty carbons I am refurbishing since, like many people I really hate full bolsters, as they make sharpening more of a pain. Are there anythings I should know before I start removing metal?

I'm thinking basically removing a small triangular section at the heel and then simply smoothing the resulting "edge".
