Hi all, mentioned this one ages ago, I finally stopped putting it off. My idiot self managed to put a ~3mm chip in the blade within the first week of me owning it, so I decided to flatten the bevels by hand to work out the chip and push back the shinogi line, which sucked. I did most of the flattening work with atoma plates and then went through a polishing progression, which finished on an akapin. I gave it test cuts throughout the process and this thing is smooth, and food release is surprisingly pretty great. It's nimble, razor sharp, flies through everything like it's nothing, and it feels less dainty than it did when I bought it, you can rock chip without it making scary noises. I polished up the hira, there are still a few small scratches on there but it's mostly good. It's also really easy to maintain and polish the bevels which is nice, usually my off-hand stone polishing is atrocious (I'm working on it), but I actually managed to get a good uniform polish on this with my off-hand, there are still a few very small scratches on the left side of the blade, but they're barely noticeable (I did my best). Please see the measurements below:

Blade length: 233 mm
Heel height: 47.75 (was 48.75 mm when it arrived)
Spine thickness: 2.5 mm
Weight of both blade and handle: 142 g (will likely be a little bit heavier once glued in)

For those skeptical about the heel height, it's got a fairly skinny neck so there's still a good amount of knuckle clearance.

Its got a Taihei yakusugi cedar handle, really nice to hold, smells great, this ones a bit darker which works really well with the blade.

Bought for $575, with the handle I've spent $665 total. Would like to get $425 $400 $375 $350 $325 $300 + shipping for it.

Having started polishing and learning to do bevels and it’s hard so Op seems (in my not super experienced eye) to have done really well!
Thanks! Yeah it's hard to deal with flattening bevels, there are a few things here and there that I'd improve for next time, but for my first attempt at doing something like this, I'm happy with the result and the polish. Plus it's one of the best performing knives I've ever used!
