Have a couple of customs coming up and bought too many knives lately. See pictures below.

MOVED 4. (Tsubaya Version) Takada No Hamono Silver#3 Stainless Steel Kasumi Santoku 165mm Rosewood Octagonal Handle

No Takada stamp on this one, but it is made by Takada and forged by Nakagawa according to Tsubaya. The box also says Takada in Japanese.

Nice little Santoku.

First owner, bought brand new from Tsubaya.

Used for 1 meal prep at home. It has some minor scratches (I received it with those minor scratches).

Paid $300. I'll do $275 $250 with PP (G&S) shipping and insurance included for CONUS. Will cover the first $20 for outside of CONUS.

MOVED 5. JNS Tanaka Yoshikazu Gyuto 170mm Blue 1 Special

First owner, bought brand new from JNS.

This is the special polished version with handle upgrade. The knife is super sharp.

Used for 1 meal prep at home.

Paid $480. I'll do $425 $375 with PP (G&S) shipping and insurance included for CONUS. Will cover the first $20 for outside of CONUS.

MOVED 6. Toyama Noborikoi Kasumi Deba 180mm

First owner, bought brand new from JNS.

I learned that fish butchery is not for me. I'm more of a chicken and land animals guy.

Used it to fillet 2-3 small / medium sized fish at home.

There are some scratches and some oxidation spots (this is iron clad). Hope you can see the condition well in the picture. Think it can be polished / removed pretty easily.

Paid $405. I'll do $300 $250 with PP (G&S) shipping and insurance included for CONUS. Will cover the first $20 for outside of CONUS.

BNIB

SG2 steel; ironwood rivet handle

Paid $230. I'll do $200 $175 with PP (G&S) shipping and insurance included for CONUS. Will cover the first $20 for outside of CONUS.

(SOLD) 2. Hitohira Tanaka Yohei 210mm Gyuto Aogami 1 Kasumi Ebony Handle

First owner, bought brand new from Bernal.

Great knife. Tanaka forged. Used for 1-2 meal preps at home.

Would love to trade for the 240mm version of the same knife + cash if someone wants to trade.

Paid $485. Looking to recoup the entire cost. $520 with PP (G&S) shipping and insurance included for CONUS. Will cover the first $20 for outside of CONUS.

(Withdrawn) 3. Hitohira Kikuchiyo Yohei VG-10 Damascus Gyuto 210mm Ebony Handle (Limited)

First owner, bought brand new from Karasu.

I love the damascus pattern on this one. Nakagawa forged. Only made test cuts.

Kinda pricy for a VG10, but it is very high quality. I actually saw similar knives with generic store brand at knife shops in Tokyo selling for similar prices.

Paid $490. I'll do $475 with PP (G&S) shipping and insurance included for CONUS. Will cover the first $20 for outside of CONUS.

Makes sense, never seen it with wood before...very jelly. I'm looking into an ECM synchronica with wood panels or something similar next for me.

And I understand haha you win some you lose some :(

Going to keep the VG10 Yohei. It doesn't seem popular compared to other Takada's knives. Kinda expensive for a specialized knife, but this is pretty much the ultimate citrus knife imo. It can handle large grapefruit with easy and nimble enough for lemon.

Somehow the price drop I did yesterday didn't go through. I made some further price reduction. Priced to sell. I think the deba is especially a good deal if you need or want to try a deba.
