When I was cooking for a living, I used a Global 21mm gyuto, and a Victorinox serrated bread knife (which I ended up using for a lot more than just bread…) and that was it. I WISH I could have had this kit.
I am asking $550 (+ shipping) for the bundle or prices as individually laid out below:
Y Kato: $215
Wakui: $240
Manaka: $165

Some more info on each knife:
Yoshimi Kato Ginsan:
- 240 x 50
- Sharpened once, never thinned.
- Very lightly used with no noticeable scratches, scuffs etc that I can see to note.
Wakui Shiro #2:
- 215 x 49
- Sharpened once to establish a micro bevel on the convex, never thinned.
- Light patina on the core steel which betrays the light use this has seen.
- A few very VERY light scratches by where the stainless cladding meets the core steel, which I’ve tried to show as best I can.
Kisuke Manaka Shiro 2:
- 170 x 53
- Sharpened around 5 times.
- Never thinned but could probably do with some thinning soon - would make a good intro to learning this skill as the bevels are hand-finished.
- Fairly well used but well cared for, with a stable patina that interestingly has left some marks on the kasumi blade road but can be restored with a little polishing.
