Hello everyone.
I am a home cook in the UK with experience working in professional kitchens - I bought my first Japanese knife a few years ago after the usual roster of Victorinox, Globals etc and am now fairly deep into the rabbit hole with a particular fondness for fully reactive finishes. Don't ask me how many gyuto's I own...
I am quite late joining KKF but have been active in kitchen knife forums on Reddit for some time - I am keen to widen my opportunities to buy and sell bits and pieces as they come and go from my ever-evolving collection. I have kept the same username across both platforms, so feel free to say hi there too.
I have a few favourites in my collection, but currently the top spot is occupied by my Yoshikazu Tanaka Shiro 1 210mm (it's more like 200mm) gyuto. I'm not normally a fan of damascus, but it's quite subtle and looks nicely rustic once you develop a patina.
I look forward to getting more involved in this community!
