San mai gyuto from Christian Dam. Asking Euro 500.
This is a work horse with a very good geometry. Given that it’s not that thin I was surprised by how well it moves through ingredients. I’ve enjoyed this knife for most types of slicing work. It’s one of those knives that gets lots of compliments for it’s ”rough” look. Dam has recently turned full-time knife maker, and I’ve heard lots of positive comments about his work.
Prior to delivery Dam thinned the knife on stones and brought up the bevel slightly. The knife is thus in a good state should anyone wish to work on the kasumi finish.
272 x 54, 275 g. W2 (not shirogami), 64-65 HRC, wrought iron. Wa, ebonized oak. Bought Feb -22.
