Does anyone have any experience with this knife line? Been trying to look for infos about this knife but I cant find any of it. I just wanted to know if the Mirror polish on the gyuto is Stainless or does it get Patina after use?

Can't go wrong with this as Tanaka and Morihiro are some of the best in the business, as long we you like the profile, quality and grind will be top notch. Mirror polish will scratch very very easily though. I still own and love them, but just something to be wary of.

I actually have the Choyo Ginsan and im loving the knife. F&F is top notch on the knife and here I'am debating of getting the Aogami 1 version.

I feel you. I have some quite similar versions of knives just because I love them so much. Aogami 1 is probably my favorite out of all the hitachi carbons, and Tanaka is probably the best to do it.

Agree...Been getting a lot of Blue 1's and Y. Tanaka as of lately....

My man. I have a Tanaka aogami super coming in. Had 2-3 before and sold them. Happy to get another. I'll be jealous of that Choyo if you get it. Would love to get more Morihiro stuff. If I didn't have a couple mirror polished honyaki already I would consider this
