First up is a Kintaro (Y. Kato) 120mm petty. Stainless clad/ AS core. $180

Next up is a Humora Guren (Istuo Doi) 150mm petty. Aogami 2 core. $200

Then there’s this Moritaka Ishime 180 sujihiki. Aogami 2 core, upgraded to an ebony & horn handle. $225

Hirotomo 210mm gyuto. Picked up from JNS. Upgraded handle from a Kisuke Manaka gyuto. $220

Mazaki 180mm Nakiri. Shirogami 2 core. $250

The Hirotomo gyuto from JNS is a great performer and it cuts so well despite it being quite "thick". It has a kind of an S-grind Highly recommended
