Ikea Ostbit. Have seeen it marketed as both a lid holder and a plate holder. Have been using mine for stones for years. I think @daddy yo yo used it as a knife stand.

For that I use the Ikea Variera model. Marketed here as a lid holder, but also works fairly well for sheet trays and cutting boards.

Peter doesn't do any sharpening, so you just need to wait till his knives get dull. Good news for you, he went for a 52100 and not an apexultra, so you won't be waiting as long
Why sharpen when you can get a new knife
To be fair I usually find I've decided whether a knife is going to be kept before it gets dull. I'm not out here breaking down chicken carcasses on marble with these gyutos

Edit: Just to say also that doing a custom with Ed was an absolute pleasure and would like to reiterate my previous comment about recommending getting on his lists. If this cuts as good as it looks I'm going to be very happy

Not sure you'd still want them after that. Good idea though. I've heard Dan does really nice boning knives - maybe that's the move

Also, last time I checked, Ed does lifetime sharpening if you send the knife back to him. You might just need one more so you can have a two knives rotation in case you need to send one over to him for sharpening.
Naoki Mazaki White 2 Migaki 240mm Gyuto with Dyed Maple Burl handle. Lots of praises with this knife so I purchased one to find out what the fuzz is all about.

Nah I'm trying to sell my slot to get a kidney back. Life without any kidney ain't all that much fun.
