I am offering a nice, large Gyuto by Simon Lönsted for sale.
The knife feels great in the hand and is well made. The specs speak for themselves...

Gyuto 253x73mm !
san mai
1.2562 + wrought iron
62HRC
thuja root + reindeer ferule
s-grind
277g
7mm out of the handle - 2,1mm middle - 0,7mm 1cm from tip

The knife was never sharpened.
Simon has created a slightly larger cutting bevel and the knife has a slight scratch on the side, see photo.
