Hi All!

Looking to buy a good stainless clad Gyuto for my girlfriend. She's been enjoying using mine and would love to get her one of her own for Christmas :)

a morbid curiosity led me to press “buy” on a 1.4116 210mm gyuto, basically the answer to a question nobody asked: “what if they made a sub-$40 Victorinox in China and finished it in Japan, giving it a gyuto profile instead of a chef’s?”

It hasn’t arrived yet so this isn’t actually a recommendation but if you want to go $ instead of $$$$ it might be an option!

Reigetsu Gyuto 210mm​

The Reigetsu line from Tojiro was formerly called Fuji Narihira. These are very popular, good bang-for-the-buck knives made with Molybdenum Vanadium blended steel. The handles are made with durable POM material that won't crack or shrink. All finishing work and inspections take place in the Sanjo City factory of Tojiro. The initial grinding and heat treatment are done in China. This is a great option for line cooks!

Quite curious how this knife is! Looking at upgrading the beater knives in a nice Airbnb and considering either the Reigetsu or Tojiro bolsterless.
 
After light initial use and sharpening I’m thumbs up on the Reigetsu — 4116 in gyuto laser format. The OOTB sharpness is pretty good:


Have touched up and it is doing just fine now. It went through a potato pretty much as you would expect.

I forgot to conduct goniometry before sharpening so we’ll never know the original edge angle.

Thickness is about 0.5mm at 5mm BTE.

Would do great as an Airbnb or beater/lender or keep-in-car-knife-roll. Can’t beat the price! Credible Japanese alternative to a Victorinox, with a yo handle instead of Fibrox.

Update: sharpened the Reigetsu tonight. Decent hard 1.4116 steel. Thinned around 10°, rebeveled with SR1000, refined with SG16000. Guessing approx BESS 100, curved through paper towel. Very decent for the price. Recommend.
