The thinning continues. As in the last sale, all these knives are good performers. For these, it is mostly their size that prevent them from getting as much use as they should. I just prefer a longer knife for prep. All have been used lightly in a pro kitchen.

Halcyon Forge 210 mm 52100 mono steel S-grind - SOLD!

This was my first experience with an HF product. I think it is a relatively early example. And it is easy to see why they have such a strong following. It cuts like a laser and the s-grind aids in food release as you would expect. Honestly, if this was 240+ there is no way I would sell it, but it is too small for me as a prep knife, and waaaaaay too nice to use as my service line knife. Handle is maple burl and blackwood. It is original equipment and is very comfy. I made a maple burl saya for it. Selling for $450 SOLD includes PayPal fees and shipping in the ConUS.

Sukenari 240 mm ZDP-189 -sold!

I picked this up new from Sugi because I was curious about ZDP-189. It's edge life is no joke. I touched it up once and it seemed easier to sharpen than the Hap40s that I have. For some reason, I didnt know Sukenari measured from the handle like Sakai or I would have gotten a 270. I made a handle for this out of stabilized spalted tamarind and blackwood with brass and g-10 spacers. The saya is carved from spalted persimmon with an inlay of the handle materials so it is a good match. Selling for $375 which includes PayPal fees and shipping in the ConUS

Brian Hanson 228 mm Stainless clad V-Toku - SOLD

Got this on BST because it looked so cool. The cladding on this knife has a lot going on. Once I cut with it, I liked it so much that I reached out to Brian to order a 240 in 52100. This is only on the block because it is sort of an in between size for my preferences. It has great thickness out of the handle and very nice distal taper for a knife at this price point. So it feels authoritative but is still thin behand the edge. He also sold it with a handle from walnut burl and blackwood. Pretty nice for a standard line handle. I crafted a matching saya out of highly figured walnut and blackwood. Selling for $250 SOLD which inludes PayPal and ConUS shipping.

That's how it happens 🤷 or you buy something impulsively then sell to make up for it 🤣
You almost had me with that Bidinger! I have never owned one, and his work is on my short list of things to try, but then I would have another 210 that is waaaaay to nice to use on the line (just like that Halcyon I just sold. My restraint was impressively strong!

Sorry brother. The first DM came in on that before I even posted the pictures. It is a really sweet knife at that price point. Ordering direct he was at just around $300, but that was a few years ago
