Tadafusa nashiji stainless clad blue2 gyuto, 210x47, 187g with cheap saya thrown in for free (small crack in saya fyi).
Not sure why these don’t get more mention around here, very proficient cutter with what I think is really the ideal handle: contoured comfort of a western without the pesky proud rivets, tang, bolster nonsense that drives me crazy. Honestly nothing worse that proud metal parts on a western handle, which can ruin an otherwise great knife. This is hidden tang, so none of that. Plus integral/welded bolster, it’s a super comfortable handle. I also own the 150 nakiri, 180 gyuto, 240 gyuto and 240 suji in this line, so yeah, I like ‘em! Just don’t have a distinct use for the 210
