I use a stainless clad blue gyuto , for what you pay it's great

Had one (semistainless santoku) and it was great for the price. Would buy another one if they offered a 210 gyuto with the same steel & surface finish...

I have a 150 petty Nashiji from EE and even though I have thinned it a few times, the blue steel in my sample was HT quite well. Edge last a long time. Its my chicken knife. The handle is a bit too small for my liking but the blade profile cuts well.

I was told by someone that the knives are earthier designed or made by a woman? I was really amazed as I don't think I have ever come across a female made knife. This would explain the small handles?

I gave one of the SLD's to my friend as a gift, OOTB edge was outstanding, the handle isn't that bad, only the plastic ferrule sucks. Got myself the Santoku and had it re-handled

One of the lines is the work of a famous designer lady but she does not make them.
