Picked this up from Knifewear a couple years ago. It's seen mostly infrequent use and was sharpened a handful of times, including 1 thinning. I tried gently thinning the shoulders a on a 400 grit stone to see if it would help with wedging on harder produce, but didn't really see much result as I didn't want to take it too far and affect the food release. I might have seen a small improvement on carrots but it's still wedgy on something tall and dense like sweet potatoes.

The food release is good and the knife does well on any soft product, some cracking on carrots but it's great at cutting some neatly stacked carrot coins. Would not recommend as your main sweet potato knife, although it does have the height to muscle through. It's a fun knife overall but I'm not doing enough high volume prep to get my money's worth. This knife is not living its best life cutting 2 cucumbers and a potato per week, hopefully it can find a better home.
