I was wondering if anyone could share their experience with Takeda knives and their stainless cladding.

I recently picked up a nakiri from the BST forum and noticed that there were parts on the spine which seem to show the core(?) steel. It's a thin dark line that runs right through the middle of the spine but doesn't run across the entire spine.

Any comments on whether this is normal or a reason for concern?

Thanks

It's common. It's a san-mai, three layer, construction. Think of it like a skimpy sandwich. The stainless is the bread, the core is a slice of meat.

Gotcha. I was curious that maybe I had a case of taco - where the tortilla kind of breaks and the filling spills out a bit.

Thanks
