Selling this one because I got a Mazaki AS and am thinking it may be the ultimate knife… I’ve pretty much stopped using the Kyuzo which I used to use a fair bit. I believe the handle is Blackwood not ebony but can’t confirm.
The reason I say for pros is that I’ve been using it in the kitchen and sharpening the bevels to maintain the geometry and thinness. The bevels are nearly flat although not quite there yet. Height is 48.5mm, so hasn’t lost anything of significance. But I stink at polishing and am aware of this, so if a collector or home cook who likes to display it wants one of these this might not be the one. Price reflects this at $400.
