S Tanaka 211x49mm Gyuto
R2/SG2 core w/ damascus cladding
Custom pyinma/horn octo handle
A fun little knife that I've been wanting to try for a while. I did a mini spa treatment to fully round/polish the rough spine and choils that came stock, and fit a new custom handle. It's been sharpened once with only 2k for initial edge, and I've used it for one dinner prep for my family.
The knife has a thin, very slight convex grind on both sides. 1mm thick at 10mm behind the edge, so there's no wedging I experienced in testing. I didnt notice any drag from the etched cladding, but the kanji has some rough texture to it. Profile has about an inch of flat spot at the heel which transitions to a smooth curve to the tip. This particular one also comes with the taller neck/machi than some other versions I've seen, which gives a comfortable amount of material for pinch grip. There is one minor spot of checking in the wood handle toward the middle of the right side. It's common in natural wood and many might not even notice it, but I want to make sure to disclose it because it's not perfect to my standards.
