Got a few items here that need to find a new home.
DISCLAIMER **These are used knives from a professional kitchen environment, they have wear and imperfections**
First up, Jiro petty, 152mm, white #1? - $275
Bought from KKF here: WTS - BNIB Jiro 154mm petty
Great cutter, very light, nimble, and takes a great edge. There is a noticeable crack in the handle and I have no idea how it got there (I can fill this with glue and sawdust before shipping). The loss in length is from a slight re-profiling of the tip by Carbon knife to take some of the belly out.

Next up, Integral Bloodroot blade line knife, 225mm, reclaimed sawblade, buckeye burl handle w/copper spacer--$500
This was a custom order from 2017, has that pre-pandemic shine to it. Decently used over the years but doesn't have any real defects to speak of. Fantastic cutter, slight flex present and the profile works for anything you throw at it.

Last but not least we have a Togashi 210mm kasumi white #1 gyuto---$300
Picked this up at Carbon knife about a year ago, used and in great condition. Nimble cutter and takes a great edge.
