Wakui with Machi 245x52mm
V2 (similar to white/blue 2) with Iron Cladding
Custom burnt oak octagon mono handle

From the latest batch out of JNS. I've used it just twice, so still in excellent condition, but I prefer more workhorse of a gyuto. This iteration of Wakui features the same great profile, and spine taper as his other work. The thick machi is a cool addition that feels really good. I wish more makers would do this too. The grind is very thin immediately behind the edge, but going up the blade, is a little thicker than a similar sized Kochi KU from JKI. Not quite as thick as the tsuchime version from CKTG. Decent heft, no wedging.

I added one of my grippy burnt oak mono handles to maintain the forward balance.

$325 shipped & fully insured within US (international PM for details)
