Thanks for letting me join your knife community. I'm a Line Cook turned Chef turned knife enthusiasts and am super egar to learn more and hopefully add to my growing collection. I have been in the industry for 14 years and collecting Japanese knifes for ~4 years. I've attached a few pictures on my knife bag I carry along with some of my favorites I own. I'm still adding new knifes to the collection, the newest being a 140mm Shibata Chibi TinkerTank and 180mm Takeda B2 Nikiri.....beautiful blades. I mostly bought knifes to use specifically at work or private events but recently I've been collecting heavily. I also enjoy maintaining, shapening, thinning...ect of all knifes. I will be searching for information on Konosuke, Nigara, Jiro and hopefully some still unknown (to me) blacksmiths! And also some new techniques/knowledge to improve my sharpening abilities!
