Ok, here's the deal. I've been wanting a Migoto for a minute. I can never seem to catch them when they're available.

OKM6953 has, what seems to be, some great examples of these for sale here: WTS - Sakai Bangers 3: Migoto Drift (Y Tanaka B#1 & AS / Nakagawa W#1 & B#1)

Then that Miura is well specc'ed and I was leaning that way. However, the grind looks better on that MxT B#1 270 but then the..... however, the...... And that's my problem.

I like WHs that cut like lasers (AMAP). I have a great WH gyuto collection already but N + 1 is the operating algorithm. I don't own a 270 yet but I have been trending smaller and more humble.

Thoughts? Suggestions? What's the best cutter of this group? Looking for something to push me in one direction.

I bet he has a great collection of oyster knives.
Aww shucks. 😶

Somebody on another forum suggested to get a Migoto since they're hard to get. I don't have a Nakagawa either so that's ticks two boxes.

The Miura Itadaki series looks good but it seems pretty available (right now). And has anyone tried some of the other knives from that series, It sounds quite promising.

Wish me luck boys. I'm going in. 🔪🔪

Having owned variants on those 3 Migotos, if it were still available, the 255 suminagashi would be the obvious choice. But between the 240 W1 and 270 B1, I’d go for the latter.

I got the 240. The redditors were all on the Nakagawa W1 train and that lower price let me get his Maillet bunka as well. I am pumped.

I appreciate the help gentlemen. You are all good people in my book, except Dan, he's obviously an enabler and here for the schadenfreude. Typical Patriots fan.

Buy them all; pretend you’re going to sell the one(s) you don’t like.

The Miura Itadaki that I had (Tanaka white 2) was not a “workhorse that cut like a laser”. More like a decent mid weight.

If you ever get the chance, try an Andrei Markin when one pops up on BST (he also offers some via IG). I’d say they fit comfortably into your preference and not too expensive for a Western maker.

Good to know, thanks. Markin got on my radar recently. He's one of the names mentioned regularly for their cutting performance. I have been mainly getting Westerns and now finding JKs that fit the bill. It's hard to navigate as there's so many great smiths with distinctive styles. I got a K&S Tanaka Ginsan that's a nice midweight. I don't love or hate it.

Funnily enough, when that Hyde first went up for sale, when you got it, I wanted it SO bad. It's such a great one of his; however, I got the HH that Matt sold not too long ago with the wrought clad spicy white. That was my dream Hyde and I love it.

Henry makes a great knife. I thinned mine a bit BTE with a 5 dps relief bevel and now it's a killer.
