WTB WTB Carbon Scimitar or gyuto (270-300)

Looking for a BEAST to plow through portioning large cuts of dry aged beef.
Here are a couple attributes I am interested in:
- 300mm (open to 270s)
- larger comfortable handle (wa or new school western)
- little to no flex
- curved profile
- beefy spine , thin behind the edge , nice taper
