Okay, so even though I want every Eddworks knife I can get my hands on, I should be less of a greedy knife hoarding goblin. I'm letting this one go simply because I have two almost identical gyuto with the other being a 52100 version that I very slightly prefer. This is a fantastic knife that deserves to be put to work.
This has seen light use and has never been sharpened. Patina comes from one trip through some yellow fin and salmon, and another one slicing overly dry chicken because my significant other thinks all meat should be dry as **** for some confounding reason (on the bright side it means she leaves my sashimi grade fish alone ).
Dimensions: 242 x 57.2mm
Spine: 7.1mm out of the handle, 5.7mm above heel, 1.8mm midway, 1.0mm about ~1" from tip
Weight: 243g
Steel: Apex Ultra @66hrc
Handle: Arizona Desert Ironwood
As you can see from the spine dimensions and choil shot this starts out workhorse in the back before majorly thinning out. Beefy, comfortable and authoritative in back, but very effective tip at the front. It has a nail flexing edge, but doesn't feel fragile at all.
Asking $535.00 shipped CONUS via PayPal G&S. This is a hair more than I paid, but will cover my costs as I'm not willing to lose a cent on an Apex Ultra Eddworks knife. I'll call this $500.00 trade value and will likely wait a day on this before accepting a sale offer to see if there are any interesting trade offers (another Eddworks?! ).
