Xerxes gyuto from his recent batch. Really good knife, just overlapping too much with other knives to stick around. Only used for test cuts on an onion and sweet potato. Nice thickness at the spine and tapers down to a very fine edge. Steel is 1.2419 mono with an ironwood handle.
