Im open for japanese handle suggestions aswell.
I am using every knife day over day for any purpose, i sharpen them aswell and i love them as an extention on my arm.
The tasks and the preparation i do are too many and 16hours per day, i need and i want workhorses, lasers, everything not to get me bored

Teruyasu Fujiwara Maboroshi Gyuto 210 mm - there's one for sale on the C K T G forum. Some nice touchups done to it to make it much better than factory. Thought I'd let you know just in case.

I have an Itinomonn Ss 240mm, a Shun 250mm and a Misono ux10 240mm. Also i have a ux10 210mm. Seems like the 210 suits me better even tho im totally satisfied with the itinomonn.
I dont know if im buying them all these, but i will start buying soon 1 by 1.

ryusen used to not have any pricing control, but you will see that changing moving forward as older stock is sold off
