Hatsukokoro Yoake Migaki 214x50mm Gyuto
Blue #1 core w/ iron cladding
Teak/horn octo handle
One of the best value lines currently available right now, with one of the worst QC and consistency I've ever seen. That being said, I like these a lot (I've got 5 different ones). I've fixed up what I believe were major issues with this one, which included dead spots along the profile, crooked handle install, rusty tang, and a way oversized handle. I swapped out with a teak/horn handle which I polished up and rebeveled for comfort, and coated with hardwax oil.
This knife has a workhorse of a spine taper with an aggressive grind behind the edge. Despite what the spine may suggest, this is quite fine behind the edge with no wedging. Feels solid in hand with nice thick neck. Profile has a gentle continuous curve that gets flatter toward the heel. The finish is a sort of migaki/kasumi finish that's a step up from the sandblast stuff you typically find at this price point. I also swapped the stock handle out for one with one that provides a proper forward balance. It currently has a natural stone sharpened edge, so ready to rock n roll.
