Bought this from BST (SOLD - Sakai Kikumori Yoshikazu Tanaka Gyuto 240 Kurouchi, AS) as a wide bevel kurochi knife. Converted it to full convex kasumi. Installed a $70 K&S ebony handle. Used and patina removed. His AS steel does’t sharpen as easily as his blue 1/2s but still takes a scary edge. I think it’s one of the nicer AS offerings out there.

Asking for $550 shipped in the US. Price drop to $530 $500.

Measurements:
229 mm * 50.5 mm
232 gram; balanced at 1 inch ahead of the heel
3.4 mm spine out of the handle, 2.7 mm in the middle, and 1.0 mm thick at 1 cm from the tip

Giving this one a bump because it is an absolute stunner, and if I didn’t just buy two Y.Tanakas in the last month I would be buying this in a heartbeat. Someone buy this!

Also cheekily wondering if @Hz_zzzzzz you would be open to doing another thread (or DM) on tips and tricks when doing this? I’m keen to try doing the same on one of mine.

What did you use to remove Patina?
How reactive is this now you have the kusami finish??
It’s absolutely awesome..!! I can’t stop looking at the pictures..!!
I’m super interested..! I have a few mojin kusami finish and they are super reactive..!! Turn shallots black in 2 minutes..!!
