This is my new creation, a gyuto knife crafted with D2 steel and a sanmei construction.
It features three different surface treatment styles.
The material consists of a stainless steel surface with a D2 steel core.
The hardness is approximately 60 HRC.
The final sharpening was done using a SUEHIRO 5000 grit sharpening stone.
It is a 210mm Gyuto with a thickness tapering from 2.8mm to 1mm. Most of the blade maintains a thickness of around 2mm.
This knife is designed for those who do a lot of cutting. It is durable, reliable, offers good cutting performance.
Although D2 material is not completely rust-proof, its rust resistance is sufficient for everyday use. You won't need to worry about rust unless you leave it covered in food juices for several days without cleaning it.
The characteristic of D2 steel is that it's difficult to sharpen to razor-like sharpness. So I will deliver it with a 5000 grit grind standard.

spine:2.8mm at neck ,2.6mm above the heel, 2mm at half,0.8mm at 1cm from the tip(Each one has some variation, but the differences are minor）
