    Yes. Is from Mercari. Have wanted to try a bigger gyuto for a while, and also a KS gyuto, so it was a combination. :-) Have tried the knife for some cabbage and carrots. The knife is not very heavy, but the center of gravity is a little further forward than I am used to.

    I have to say; for me, with hands that are normal size, the handle and the balance is very good. 👍 (I think it is the best handle I have now).

    I have this knife in 250mm. It look amazing! My favourite knife at the moment. Vedge a little bit in big carrots and big potatoes. I get the steel very sharp but find it difficult to get good “bite” in the steel. I don’t have much experience with the apex ultra. The steel is very hard. Best...

    best grit finish for slicing cooked meats

    I like 500 to 2k for meat with synteticks. Naturals aizu/aoto/not-to-fine-suita.

    spash and go middle grit for work

    I have chosera 1k and 2k, and shapton glass 2k in this area. I like chosera 2k best, but it depend on your knives. SG 2000 is really good on some stainless steel.

    240 yanagi, anyone?

    I have a 240 and a 300 yanagi. The 300 is near 285 (Masamoto). I like both. I think I use them same amount of time but for different tasks. If I only could have one, it must be the 300. I’m a home user, and the yanagis don’t get heavy use.

    I do. With all my knives. Only draw cut with the small ones. All types of cuts with the bigger ones.

    Best S&G midgrit synthetic?

    The stone I usually pick up when I need something in this grit area is the Chosera 2K. Likes it very well for carbon. Also has SG2000, which is used for hard stainless steels, but thinks Chosera gives a better feeling with carbon. However, have not tried Shapton pro 2K.

    Thin honyaki gyuto

    Translation characters

    One more stone I hope someone can help me with the translation on.... This is a big stone from buyee. 25cm long, 11cm wide and 45mm thick. 3250gram. Sold as Shoubudani.
