Makoto Kurosaki Sakura SG2 Gyuto 240mm - great OOTB sharpness and a joy to use. I ended up caving because I couldn't decide between a 210 and 240 and found a 210 that I really liked - just had to fill the void and get both. As per popular opinion here, 240 didn't feel at all unwieldy and anyone...

How to choose between 210, 240, 270 and 300 mm gyuto as main knife

I'm pretty new to this and went through the usual length anxiety 🤣. As a layperson: I picked a 210 option in the line I chose because it represented much better value at the time and having picked up both lengths of the same knife it didn't feel too small. The cutting edge measured 215 but I...

    Avocado Uses Required

Deep fried avocado sounds amazing! I love smoothies/milkshake - would probably make enough avocado maki to make myself sick. How about doing some summer rolls? Avocado, rice noodles, veg and some sriracha and peanut sauce is amazing. I would definitely freeze some based on your yield though.

Help choosing first high quality stone set! (EU Buyer)

So I got the Chosera 1k and an Atoma 140 in the end. I tried to email JNS but couldn't get updates about the stock. My strategy is to practice on every knife in the house (apart from my expensive ones) until I can get a screaming edge from the one stone. I don't have any knives in need of repair...

I love this one! Actually from a sheerly utility point of view I benefit from this buy even more than the gyuto at the moment.

Yu Kurosaki Shizuku 210 Gyuto with custom urushi lacquerware handle: This is my first gyuto - joining my Tanaka Ginsan 150mm petty to start my J-knife collection! I guess this is quite a well known knife here but for anyone wondering - it measures 47.2mm high at the heel, 215mm on the nose in...

Recommendations for a UK buyer (first serious gyuto)

It arrived today! I could definitely handle a 240 but this is very practical for my current environment. I figured the lacquered finish is both beautiful and ideal as it is waterproof - so this is one that doesn't need to be babied. Really pleased with the fit and finish!

Recommendations for a UK buyer (first serious gyuto)

Kitchen Provisions turned out to be a great store with really friendly owners - I picked up a Tanaka G3 while there and got to try both 210 and 240 Shizukus.

Recommendations for a UK buyer (first serious gyuto)

Yes thanks! I found a great deal on a special version of the 210 - while I was initially going for the 240, it would have meant paying over £100 more for the larger model and standard handle so I couldn't resist. More excuse to get a Suji later or a longer gyuto (I want one in carbon in future)...

Knife Storage - Free Standing (UK)

Wow that's a beautiful stand! I love the Piotr the Bear ones and had seen them, but I'd like to try and keep it to £50 or below if possible. There are some on Etsy that look promising. My other solution is to buy a Magblok and make a stand for it myself - adds flexibility to wall mount it if I...

Help choosing first high quality stone set! (EU Buyer)

Sounds like a great setup - unfortunately the JNS 1k is out of stock at the moment though they do have an 800... Wondered how it measures up against a Cerax 1k which is a fair bit cheaper, but I'd rather aim for stones that I'll keep so I don't mind stretching if it's worth it...

Help choosing first high quality stone set! (EU Buyer)

Hey guys, Firstly just wanted to thank all the kind souls for the guidance I've received on this forum so far. I'm quite new to this hobby and my first knives are a Kurosaki R2 210mm Shizuku gyuto and a Tanaka Ginsan 150mm petty. Thinking to add some carbon knives to my collection but I need...
